The grapes were carefully transported and rigorously sorted at the winery ensuring that only ripe clusters free from rot underwent a short cold maceration followed by gentle pressing. Free run and lightly pressed juice was chilled to 8 degrees celsius and cold stabilised for 48 hours. The juice was then racked to stainless steel tanks where it was fermented at low temperatures (12 - 13 degrees celsius) for 25 days until dry. After fermentation the was left on lees for 4 months prior to blending. The winemaker used a battonage regime that enhances the texture on the palate, lending the wine more body, weight and interest. A small fraction of the wine was fermented in stainless steel 250 litre barrel shaped tanks. This 8% of the blend adds complexity and roundness to the palate.
